When fall hits Ellijay, the kitchen fills up with things that belong to the season: sweet squash, earthy mushrooms, and herbs that smell like the woods after rain. Our chefs don’t overdo it. They just let the ingredients speak for themselves,  a little butter, a little heat, and a lot of patience.
